Congratulations on finding the perfect pancake recipe!
We've got a couple of secret ingredients that really make these pancakes delicious, other than that, it's a pretty basic recipe that anyone can do! Don't be intimidated if you are a beginner - but don't underestimate their deliciousness if you are already a pro!
Pancakes are a go-to recipe in our house. We come from big families and we have a big family -- so a cheap, easy last-minute meal is exactly what we are always on the look-out for! What's great about this recipe is that you can easily halve it for just 1 or 2 people, or in our case, triple it for the masses!
Note: Orlando Mexican Vanilla - It has come to our attention that the Orlando Mexican Vanilla you can buy on Amazon is NOT GOOD. I don't know if it's fake, or just a cheaper version, but it contains additives like imitation vanilla and glycerin. The kind we use is pure, organic, aged Vanilla. We are so sorry, but we don't exactly know where to get it since they don't appear to have a web presence - we get ours directly from the factory in Mexico. 2 cups Flour
2 TBSP Sugar
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
2 Cups Buttermilk (preferably full fat)
2 tsp Vanilla
1/4 cup Oil
Spoon onto griddle (approximately 1/4 cup each pancake)
Flip halfway through, when edges of the pancakes lose their shine, and bubbles rising to the top pop without filling in again with batter.
